Menu Plan Monday


Last week's menu didn't exist. As I started to feel better, I made a trip to Kroger, and I bought some basic staples. Spaghetti sauce, frozen pot-pies, and Ramen. All those things always sound good to me, and they are my fall backs when I don't feel good. Luckily, shortly after that trip, I started feeling better. Between my recent surgery and this virus, I'm ready for good, healthy normal-ness for a good long time.

This week, I'm taking dinner to a friend with a new baby on Tuesday. I planned something easy to double, so that I could make our dinner at the same time. Mike is going to be thrilled with dessert on a Tuesday. His childhood was very covered-dish impaired, so he's always excited when I pull out a Cool-whip/pudding concoction, and very often, I'm surprised by the fact that he's never had it. This eclair dessert is no exception. He might be new to it, but I know he'll love it (as will my friend Frannie). Because having a new baby is always such a crazy time, I'm also taking her a bunch of bananas and some muffins for easy snacks.

Lettuce is crazy in our garden right now, so we'll have salad with every meal, and usually for lunch, too. I have beautiful snap peas for the salads, too.

Friday: stir-fry over Ramen (bok choy, mushrooms, asparagus, snow peas)
Saturday: pot pies (lunch), nachos (late supper after the pop-up adventure)
Sunday: out (lunch), Mexican chicken salad (supper)
Monday: sausage cornbread, huge pot of greens (mustard, turnips, mallow, beet tops)
Tuesday: sloppy joes, Texas caviar over lettuce, baby roasted beets for us, chips, eclair dessert, and (for the friend) muffins
Wednesday: sausage and chicken gumbo (probably with baby chard stirred in), potato salad
Thursday: lasagna rolls, salad

This menu incorporates all of the beautiful produce I got at the farmers' market, except for a handful of tiny baby zuchinni and a head of cauliflower. The cauliflower will go into salads one night, and the leftovers, I will eat steamed for lunch with white sauce (oh, how I love thee). The zuchinni will probably end up stuffed with extra sausage cornbread tonight, and we'll eat it for lunch tomorrow.

I have a friend who has had recent surgery and been hit with a nasty virus too! Poor girl has lost her voice.
